Whisk together the egg, milk and honey.
Add the rest of ingredients and beat until well combined.
Heat the coconut oil in frying pan. Using a measuring cup, spoon 1/3 cup batter into centre of frying pan. Cook on a medium heat for a few minutes & once bubbles start to form, flip the pancake. Repeat process for the rest of the batter
Top with grilled banana, almond butter, blueberries, honey and pistachio.
